Apricot Chicken

Ingredients

  • 550 g double chicken breast fillets (2 double chicken breast fillets)
  • Salt
  • 3 apricots
  • lemon balm leaves
  • 2 tsp Honey
  • curry powder
  • 2 tbsp clarified butter

Instructions

    Trim skin and tendons from the chicken breast fillets. Season both sides with salt. Dice the apricot flesh finely. Chop the lemon balm leaves.

    Open the chicken breast fillets, brush with honey. Distribute herbs and apricot pieces on top; season with curry. Fold the meat together, secure with toothpicks and coat all around with curry. In hot clarified butter first brown each side for about 5 minutes, then cover and cook another 5 minutes. Cooking time depends on fillet thickness.

    Remove the toothpicks from the meat and slice the chicken breasts into rounds for serving.
