Ingredients
- 4 chicken breast fillets
- Salt
- pepper (from grinder)
- 2 shallots
- 5 garlic cloves
- 1 tbsp Olive Oil
- 2 tbsp butter
- 1 bunch tarragon
- 2 Bay leaves
- 125 ml red wine
- 250 ml poultry stock
- 600 g small potatoes

Peel the potatoes and simmer for about 25 minutes in salted water.

Clean the chicken breasts, rub with salt and pepper. Peel the shallots and cut into large wedges, crush the garlic cloves. In a roasting pan, brown the chicken breasts on all sides in hot olive oil and 1 tbsp butter. Add the onions and garlic, cook briefly. Add the torn tarragon leaves and bay leaves to the pan. Deglaze with red wine and pour in the stock. Place the pan in the oven and braise for about 10 minutes. Taste the sauce. Toss the potatoes in butter and serve alongside the chicken.
