  • 1 chicken
  • 150 ml poultry broth
  • 30 g Raisins
  • 50 ml Calvados
  • 1 onion
  • 3 tbsp vegetable oil
  • 1 tsp curry
  • 1 Garlic clove
  • 6 sour apples
  • 1 tbsp Lemon Juice
  • 1 tsp fresh grated ginger
  • 4 tbsp heavy cream
  • Salt
  • black pepper (freshly ground)

Instructions

    Soak the raisins in Calvados. Wash and pat dry the chicken, then cut into eight pieces. Peel and finely chop the onion. Mix 2 tbsp oil with salt and pepper, peel the garlic and press it onto the chicken pieces. Heat the remaining oil, sauté the onions until translucent, add the chicken pieces and brown them on medium heat. Add ginger and curry.

    Wash, peel, quarter, core the apples, cut into sticks or slices, and add them with the raisins to the chicken. Pour in the broth and cover; bake at 200 °C for about 25‑30 minutes until tender. Finish by stirring in cream and lemon juice, then brown slightly if desired. Season with salt and pepper before serving.
