Ingredients

  • 3 tbsp oil
  • Salt
  • Pepper
  • 1 tsp Sweet paprika powder
  • 1 kg chicken wings
  • 1 small red chili pepper
  • 2 shallots
  • 100 ml White wine
  • 200 g plum jam
  • fresh coriander (for garnish)

Instructions

    Stir 2 tbsp oil with salt, pepper and paprika. Rub the mixture onto the chicken wings. Place on a baking sheet lined with parchment paper. Bake in a preheated oven at 200°C (gas: level 3-4, convection: 180°C) for about 20‑25 minutes, turning once. Finally turn on the grill and crisp the wings.

    Clean, rinse and finely chop the chili pepper. Peel and dice the shallots. Heat remaining oil in a small pan. Sauté the shallots and chili. Deglaze with white wine and reduce to 2‑3 tbsp. Stir in plum jam and season with salt and pepper. Transfer to a bowl. Arrange the chicken wings with the plum sauce and garnish with fresh coriander before serving.
