Ingredients

  • 120 g soft apricots
  • 60 g dried cranberries
  • 4 tbsp orange juice
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 250 g softened butter
  • 400 g ground almonds
  • 300 g flour
  • 100 g powdered sugar
  • 1 untreated orange (zest)
  • 2 egg yolks

    Finely chop the apricots and mix them in a bowl with the cranberries, orange juice, cinnamon, and cardamom. Let sit for about 20 minutes. Beat the butter until fluffy. Then add 200 g almonds, flour, powdered sugar, orange zest, and the egg yolk; knead well. Shape into two rolls about 25 cm long.

    Preheat the oven to 160 °C fan. Slice the dough rolls about 1 cm thick, flatten slightly, and place a bit of fruit filling on each. Roll into small balls, roll in the remaining almonds, and arrange on two baking sheets lined with parchment paper. Bake in the preheated oven for about 12 minutes until pale yellow.
