- Pastry dough (frozen) 4 square sheets
- 4 small apples
- 80 g sugar
- parchment paper
- dried legumes (for blind baking)
- 4 tartlet tins

Let the pastry dough thaw while lying flat side by side. Line the greased tin cups with dough, trimming excess. Cut parchment to size, lay over the dough, weigh down with dried legumes and bake in a preheated oven at 200°C for about 15 minutes until golden brown. Remove, discard the legumes and parchment, and let cool.

Wash apples, quarter them, remove cores, and cut into wedges. In a wide pot, caramelize sugar with 4 tbsp water over medium heat until light amber; add apple wedges and cook for 2-3 minutes. Let slightly cool, then arrange decoratively on the pastry tartlets and drizzle with caramel sauce.
