Anise Rings
A delightful pastry made with fresh ingredients from the baked goods category.
Ingredients
- 600 ml Milk
- 1 fresh yeast (ca. 40 g)
- 1 kg flour
- 200 g sugar
- 60 g anise seeds
- 1 tsp salt
- 130 g white sesame seeds
- 1 tsp orange zest
- 60 ml orange blossom water
- 4 tbsp liquid butter
- 2 egg yolks
- butter (for the baking tray)
- flour (for dusting)

Warm the milk gently in a pot, crumble in the yeast, dissolve and let rest for about 10 minutes. Sift the flour into a large bowl and mix in the sugar, anise, salt, half of the sesame seeds and the orange zest. Transfer to a floured surface, make a well in the center and add the prepared yeast mixture, orange blossom water and liquid butter. Knead into an elastic dough. Divide into 16 equal pieces, roll each into a rope (about 15 cm) and then shape into dough circles (about 8 cm diameter). Let rest on a floured kitchen towel for about 3 hours.

Preheat the oven to 190 °C fan‑facing. Brush two baking trays with butter. Whisk the egg yolks and brush the dough rings with them. Sprinkle the remaining sesame seeds on top. Bake in the oven for about 25 minutes until golden brown. Remove and cool on a wire rack.
