Apple Walnut Cake

Ingredients
- 250 g flour
- 1 pinch salt
- 1 tsp lemon zest (untreated)
- 75 g sugar
- 150 g butter
- 1 egg
- flour (for working)
- butter (for the molds)
- 4 sour apples
- 2 tbsp lemon juice
- 80 g walnut kernels
- 2 Eggs
- 2 egg yolks
- 80 g sugar
- 60 ml Calvados
- 250 ml Whipping Cream

Sift flour onto a work surface, mix with salt, lemon zest and sugar, and press a well in the center. Cut cold butter into small pieces and distribute around the well; add the egg to the center. Use a knife to cut through all ingredients until small dough crumbs form, then quickly knead by hand into a dough (add more or less flour if needed), shape into a ball, wrap in cling film and chill for 30 minutes.

Preheat oven to 180°C fan.

Afterwards divide the dough into quarters and roll each on floured surface into circles (~17 cm diameter). Butter 12 cm round tart pans. Line with dough, pressing the edge slightly down. Prick the base several times with a fork and blind bake in the oven for about 5 minutes.

For the topping peel, halve, core and slice the apples; mix with lemon juice. Lightly toast walnuts in a hot pan, cool and chop.

Whisk eggs, yolks, sugar, Calvados and cream together. Remove tarts from oven and spread apples evenly. Pour glaze over them and bake for another ~25 minutes until golden brown.

Take out of the oven, carefully lift from pans and serve.
