Apple Tartlets

Ingredients
- 200 g Flour
- 0.5 cube yeast (21 g)
- 70 ml lukewarm milk
- 50 g sugar
- 75 g butter
- 1 pinch salt
- 1 tbsp grated lemon zest
- 2 small apples
- juice of 1 lemon
- 3 eggs
- 150 g crème fraîche
- 100 g whipping cream
- 100 g sugar
Instructions

Whisk the yeast in the milk with 1 tbsp sugar until smooth, then combine with flour, remaining sugar, vanilla sugar, salt, lemon zest and softened butter in a mixing bowl using dough hooks to knead into a dough; cover and let rise in a warm place for about 30 minutes.

Peel the apples, quarter them, remove cores, cut into wedges, drizzle with lemon juice and sprinkle with 2 teaspoons of sugar, then mix well.

Whisk together eggs, cream, crème fraîche and remaining sugar.

Roll out the dough on a floured surface and line greased and dusted tartlet tins (or heat‑proof ramekins) with it, shaping a rim. Distribute apple wedges over the filling, pour the custard over them, then cover and let rise for 20 minutes. Bake in a preheated oven at 200°C on the middle rack for about 25 minutes until golden.
