Ingredients

  • 200 g walnut kernels
  • 250 g soft butter
  • 3 eggs
  • 200 g forest honey
  • 1 vanilla bean (pulp)
  • 200 g Flour
  • 1 apple
  • 1 tbsp Lemon Juice
  • 1 packet baking powder
  • 100 raisins
  • 150 g powdered sugar
  • 1 tbsp Lemon Juice
  • butter (for the pan)

Instructions

    Set aside about 10 walnut halves for decoration. Roughly chop the remaining walnuts.

    Peel, quarter, core, and cut the apple into small pieces, mix immediately with lemon juice. Creamily whisk the butter and gradually fold in eggs, honey, and vanilla pulp. Mix flour with baking powder and walnuts, then stir into the butter mixture, followed by raisins and apple pieces.

    Pour the batter into a buttered and floured loaf pan. Bake in a preheated oven at 175 °C for about 60 minutes. If the cake turns too dark, cover with foil.

    Remove and let cool slightly, then transfer to a wire rack and allow to cool completely.

    Whisk powdered sugar with a bit of lemon juice into a thick glaze and decorate the cake with it, top with walnuts and let dry.
