Ingredients
- 6 Apples
- 3 sheets of white gelatin
- 100 ml cloudy apple juice
- 50 ml lemon juice
- 1 Vanilla bean
- 500 g vanilla yogurt (1.5% fat)
- 15 g nuts (1 tbsp)
- 40 g granola (4 tsp)
- 1 tsp pumpkin seeds
Instructions

Wash the apples, quarter them, core and dice.

Soak gelatin in cold water.

Place apples in a pot. Add apple juice, lemon juice and 100 ml water. Split vanilla bean lengthwise, scrape out the seeds and add both to the pot. Bring everything to a boil and simmer for 2 minutes.

Squeeze out excess liquid from gelatin. Remove vanilla bean from the pot. Dissolve gelatin in the apple mixture and let it cool slightly. Then pour into four glasses and refrigerate for at least 1 hour.

Spread vanilla yogurt over the apple compote. Roughly chop nuts and mix with granola and pumpkin seeds. Sprinkle the mixture over the yogurt.
