Pineapple in Foil Packets

- 2 baby pineapples
- 1 Orange (juice)
- 1 Lime (juice)
- 2 tbsp shredded coconut
- 2 vanilla pods
- a pinch cayenne pepper
- 2 Cinnamon sticks
- 4 star anise

Preheat the oven to 200°C (400°F). Peel and halve the pineapple, remove the core, and slice each half into thin rounds. Place one half on a large sheet of parchment paper. In a bowl mix orange juice, lime juice, and shredded coconut. Split the vanilla pods lengthwise, scrape out the seeds, and stir them with cayenne pepper into the citrus mixture. Break each cinnamon stick in half and add ½ a cinnamon stick, ½ a vanilla pod, and 1 star anise to each pineapple packet. Drizzle the citrus sauce over the pineapple, fold the parchment into packets, and tie with kitchen twine. Arrange on a baking sheet and bake for about 20 minutes. Serve warm at the table and offer fresh lime wedges for extra brightness.
