Apple Nut Cake

Ingredients

  • 4 sour apples
  • 50 g Raisins
  • 50 g dried apricots
  • 20 ml rum
  • 0.5 lemon (juice)
  • 200 g soft butter
  • 1 pinch salt
  • 200 g sugar
  • 4 eggs
  • 1 tsp Baking powder
  • 0.5 tsp cinnamon powder
  • 1 pinch ground cloves
  • 100 g ground hazelnuts
  • 400 g flour
  • 50 ml milk
  • 60 g orange marmalade
  • 40 g toasted almond flakes

Instructions

    Preheat the oven to 180°C fan.

    Peel, quarter, core and finely grate the apples. Chop the raisins and apricots and mix with rum and lemon juice into the apples.

    Whisk the soft butter with salt until fluffy. Alternately fold in sugar and eggs. Gradually stir in the flour mixture with baking powder, cinnamon, cloves and nuts, then add milk to form a smooth batter. Fold in the apple mixture and pour the batter into the pan, smoothing the top. Bake for about 50 minutes (test with a skewer). Remove from oven, let cool slightly in the pan, then carefully unmold.

    Melt the marmalade and brush it over the cake. Sprinkle toasted almonds on top and allow to cool.
