Apple Semolina

The Apple Semolina from Spoonsparrow is very simple to prepare and especially on gray days it’s a real soul warmer.

Ingredients

  • 2 apples (100 g each)
  • 2 tbsp lemon juice
  • 1 tsp cinnamon
  • 4 tbsp raw cane sugar (15 g each)
  • 6 tbsp fine wheat semolina (15 g each)
  • 500 ml milk (3.5% fat)
  • Salt
  • 25 g cold butter
  • 1 tbsp chopped almonds (15 g)

Instructions

    Wash apples, quarter them, core and cut into small cubes. In a pot mix with lemon juice, cinnamon and 2 tbsp sugar. Bring to boil, simmer for about 4 minutes over medium heat, then set aside and cool for 15 minutes.

    Meanwhile whisk semolina with half the milk and let it soak for about 15 minutes. Then in a pot bring remaining milk with the rest of the sugar and a pinch of salt to a boil. Add the semolina mixture and stir vigorously; simmer for about 4 minutes over low heat. Remove from heat and fold in cold butter pieces.

    Spread half of the semolina pudding onto small bowls, top with half of the apple cubes. Cover with remaining pudding, top with the rest of the apple cubes and sprinkle with chopped almonds before serving.
