Ingredients

  • 4 eggs
  • 200 g soft butter
  • 140 g sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 300 g flour
  • 0.5 packet Baking powder
  • 1 untreated orange (juice)
  • butter (for the waffle iron)
  • 150 ml whipping cream (at least 30% fat content)
  • 2 untreated oranges
  • maple syrup (to drizzle)

Instructions

    Preheat the oven to 80°C with top and bottom heat. Separate the eggs. Whisk the butter with sugar, vanilla sugar, and yolks until fluffy. Mix flour with baking powder and gradually fold in. Beat egg whites stiffly and gently fold into batter.

    Oil the waffle iron and bake golden yellow waffles progressively. Keep warm in the preheated oven. Whip cream with powdered sugar until stiff. Wash oranges hot, dry rub, and zest peel.

    Peel the orange, removing white pith, and separate fruit segments from membranes. Drizzle waffles with maple syrup, top each with a dollop of whipped cream and some orange segments, garnish with orange zest, and serve.
