Kohlrabi Tart

Ingredients
- 150 g flour
- 150 g butter
- 150 g quark
- Salt
- Pepper (freshly ground)
- 1 kg kohlrabi

- 150 g crème fraîche
- 2 Eggs
- 70 g Parmesan
- 2 tbsp chives rolls
- 2 tbsp almond kernels
- butter (for the pan)
- flour (for the work surface)
Instructions

Fill a bowl with flour, finely diced butter and quark, season with salt and pepper, and knead into a smooth dough using the paddle attachments of an electric hand mixer; cover and refrigerate for 30 minutes.

Peel the kohlrabi and slice thinly or shave, then blanch in boiling salted water for 5 minutes, drain and let rest.

Whisk quark with crème fraîche, eggs and parmesan, season heavily with salt and pepper, and fold in chives.

Roll out the dough on a lightly floured surface, line a buttered pan with it and shape a rim about 3 cm high. Layer the kohlrabi slices on the base, seasoning each layer lightly with salt and pepper, pour the egg-quark mixture over them, and sprinkle almonds on top. Bake in a preheated oven at 200°C (middle rack) for about 40 minutes. Remove, loosen from the pan, and serve immediately.
