Apple Salad Wrapped in Puff Pastry

Ingredients
- 4 small apples (Nikolaus apples; or 1 normal large apple)
- 4 sheets frozen puff pastry
- egg yolk (for brushing)
- apple jam (for brushing)
- 250 g mixed leafy salad (e.g., Lollo rosso, endive salad, head lettuce)
- 0.5 green apple
- 4 tbsp Lemon juice
- 1 tbsp white balsamic vinegar
- 4 Tbsp sunflower oil
- Salt
- white pepper
- 1 tsp medium-hot mustard
- 1 tsp apple jam
- 4 tbsp apple juice

For the baked apple thaw the frozen puff pastry. Preheat the oven to 180 °C. Peel the apples and remove the core. Place each apple on a sheet of puff pastry, fill the apple with a little apple jam, cut the pastry generously into circles, lay them over the apple and brush the pastry edges with egg yolk so they stick together. Put on a baking tray lined with parchment paper and bake in the preheated oven for about 15–20 minutes until golden brown. Brush the pastry with a bit of apple jam near the end of cooking to give it a nice golden color. Remove and let cool slightly warm.

Meanwhile wash and drain the leafy salads well. Warm the apple jam lightly, then remove from heat and stir in the apple and lemon juice as well as the balsamic vinegar. Whisk the mustard with a whisk and season the dressing with salt and white pepper. Finally whisk in the sunflower oil. Toss the salad with the dressing, plate it, and add one baked apple on top. Slice the green apple thinly and place a few slices as garnish on each salad. Serve promptly.
