Apple Salad

Ingredients
- 4 eggs
- 1 untreated lemon
- 1 small stalk of leek
- 2 green apples (e.g., Granny Smith)
- 1 cucumber
- 200 g alpine cheese (block)
- 150 g Corn (canned)
- 150 g yogurt
- a pinch of sweet paprika powder
- Salt
- Pepper (freshly ground)
- 40 g walnut kernels
Instructions

Boil the eggs for about 8 minutes until hard. Then cool them in cold water and let them rest.

Wash the lemon, dry it, grate half of its zest, then squeeze out the juice. Cut the leek lengthwise, wash, and slice into ~1/2 cm thick rings. Wash the apples, remove cores, dice the flesh small, drizzle with a little lemon juice. Peel the cucumber, cut into strips, then dice small. Dice the cheese into ~1 cm cubes. Drain the corn. Peel the eggs and slice them thinly. Mix leek, apples, cucumber, celery, and corn together.

Whisk yogurt with lemon juice, season with paprika, salt, and pepper. Pour dressing over the salad, sprinkle walnuts on top, and arrange egg slices on the surface.
