Ingredients

  • 2 Eggs
  • 200 g Flour
  • 300 ml dry white wine
  • 2 tbsp melted butter
  • 1 tsp freshly chopped thyme
  • 1 pinch vanilla essence
  • Salt
  • 1 tbsp sugar
  • 3 tart apples
  • fat for frying
  • powdered sugar for dusting

Instructions

  1. 1.

Separate the eggs. Whisk the flour with the white wine in a bowl until smooth. Stir in the yolks, butter, thyme and vanilla essence.

  2. 2.

Beat the egg whites with a pinch of salt until stiff peaks form, letting the sugar fall through. Fold the beaten whites into the wine batter.

  3. 3.

Meanwhile heat the frying fat in a deep fryer or pot to about 170 °C.

  4. 4.

Peel the apples and remove the cores. Slice them into approximately 1 cm thick rings and dip each ring sequentially into the batter. Let excess drip off and fry for 2–3 minutes until golden brown, turning once.

  5. 5.

Drain the fried apple rings on kitchen paper. Dust with powdered sugar before serving.
