Apple Raisin Cake

Ingredients
- 125 ml milk
- 1 cube yeast (42 g)
- 3 tbsp sugar
- 1 tsp vanilla sugar
- 750 g flour
- 1 tsp salt
- 3 eggs
- 110 g soft butter
- 1 apple
- 1 tbsp powdered sugar
- 150 g raisins

Instructions

Warm the milk gently and dissolve the yeast with the sugar and vanilla sugar in it. Mix the flour with the salt in a bowl, make a well and pour in the yeast mixture. Cover and let rest for about 15 minutes in a warm place.

Add the eggs and 100 g butter to the dough and knead. The dough should lift from the bowl edges and feel soft and smooth. If needed, add more flour or milk. Shape into a ball, cover and let rise for another 45 minutes.

While the dough rests, peel the apple, remove the core, and dice it small. Melt the remaining butter in a pan, add the apple cubes, sauté briefly, dust with powdered sugar and caramelize. Remove and cool.

Add the raisins and apple cubes to the risen dough and knead in. Place the dough into a greased and floured loaf pan. Cover again and let rise for about 30 minutes.

Preheat the oven to 200°C (400°F) with upper and lower heat. Bake the cake for approximately 45 minutes until golden brown. Let it cool in the pan.
