Apple Pufflets

Ingredients

  • 3 large Boskop apples
  • 3 tbsp Lemon juice
  • 150 g flour
  • 120 ml milk
  • 50 ml sparkling water
  • 2 tbsp oil
  • 2 Eggs
  • 1/2 vanilla bean, split and scraped
  • 1 tsp grated lemon zest
  • a pinch of salt
  • 2 tbsp sugar
  • 750 ml oil (for frying)
  • 1 tbsp sugar

Instructions

    Peel the apples, remove the core with an apple corer, and slice into thick rounds. Drizzle with lemon juice.

    Separate the eggs. Whisk flour with milk, sparkling water, oil, egg yolks, vanilla scrapings, and lemon zest. Beat the egg whites with salt and 2 tbsp sugar until stiff peaks form and fold into the batter.

    Heat the oil to 160°C (the oil is hot enough when small bubbles rise on a wooden spoon stick).

    Dip each apple slice in the batter one at a time and fry in batches until golden brown.

    Remove and drain on kitchen paper. Sprinkle with sugar and serve hot.
