- 800 g starchy potatoes
- 1 tbsp sour cream
- 300 g apples
- 1 egg
- 1 Tbsp starch
- 2 tbsp wheat semolina
- Salt
- clarified butter (for frying)

Wash, peel and grate the potatoes finely. Squeeze out excess liquid and mix immediately with the sour cream. Peel the apples, remove the core, and grate finely (reserve apple slices for garnish). Squeeze the apple shreds and combine with the potatoes, egg, starch, and semolina. Season with salt.

Heat plenty of clarified butter in a heavy pan over medium heat, drop small pancakes into the hot fat, and fry until golden brown on both sides while turning. If desired, fry the remaining apple slices in the same fat. Drain on paper towels and serve fresh and hot.
