Ingredients

  • 250 g flour
  • 125 g cold butter
  • 1 pinch salt
  • 1 egg
  • 2 Eggs
  • 180 g cane sugar
  • 1 tbsp flour
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp freshly grated nutmeg
  • 0.5 tsp Salt
  • 4 apples (size varies)
  • 120 ml whipping cream
  • 0.5 lemon juice
  • 1 tbsp butter
  • 60 g cane sugar
  • 1 tsp grated lemon zest
  • 100 g pecans (coarsely chopped)
  • 2 tbsp ground pecans

Instructions

    Sift the flour onto a work surface, mix with salt and create a well in the center. Cut the cold butter into small pieces, distribute around the well, add the egg, about 40 ml lukewarm water, and cut everything together with a knife until small dough crumbs form. Quickly knead by hand into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes. Then roll between two sheets of parchment paper and line a greased baking tin. Chill again.

    Peel the apples, quarter them, remove cores, and slice or shave finely. Toss with lemon juice. Beat the eggs with sugar, then stir in flour, cream, and spices. Fold in the apples carefully. Spread the filling over the pre-baked pie crust and bake in a preheated oven for about 35 minutes. Melt butter, mix with sugar, orange zest (or lemon zest), and coarsely chopped pecans; spread over the pie and bake another 10 minutes. Let cool in the tin, then sprinkle with ground pecans before serving.
