Apple in Pastry

Ingredients
- 125 g butter
- 200 g Flour
- 50 g sugar
- 1 pinch salt
- 1 egg
- 4 apples (e.g., Boskop)
- 1 tbsp Lemon Juice
- 50 g butter
- 2 tbsp breadcrumbs
- 0.5 tsp cinnamon
- 20 ml rum
- 2 tbsp sugar
- flour for dusting
Instructions

For the dough, cut cold butter into small pieces. Place flour on a work surface and press a well in the center. Add sugar, salt, egg, and butter pieces to the well, then mix with a knife until crumbly. Quickly knead by hand into a smooth dough.

If the dough is still too firm, fold in some cold water. Wrap the dough in plastic wrap and chill for about 1 hour. Peel the apples, core them, and brush with lemon juice. Preheat oven to 180°C fan. Knead the dough again and roll out on a floured surface to about 3 mm thickness.

Cut four squares of roughly 20x20 cm and place an apple in each center. Fold over the apples, press the edges together, and seal well. Place on a parchment-lined baking sheet and bake for 25-30 minutes until golden brown.

Just before serving, melt butter with breadcrumbs, cinnamon, rum, and sugar in a saucepan. Spoon the crumb‑butter over the apples and serve immediately.
