Apple Gratin

Ingredients
- 0.5 lemon
- 1 kg apples
- 50 g almonds
- 50 g Raisins
- 1 pinch cinnamon
- 100 g coconut blossom sugar
- 110 g butter
- 4 eggs
- 100 g spelt whole‑grain flour
- 50 ml Milk (3.5% fat)
- powdered erythritol sugar to taste

Squeeze half a lemon. Peel, quarter, and core the apples; slice them thinly. Mix the apple slices with lemon juice, almonds, raisins, 1 pinch of cinnamon, and 2 tablespoons of sugar. Grease a baking dish with 1 teaspoon of butter and pour in the apple mixture.

Separate the eggs. Whisk the remaining sugar with the leftover butter until frothy; gradually fold in the yolks. Alternately stir in flour and milk. Beat the egg whites to stiff peaks and gently fold them into the custard mixture.

Spread the custard over the apples, smooth it out, and bake in a preheated oven at 180 °C (160 °C fan‑forced; gas: level 2–3) for about 40 minutes until golden brown. Sprinkle powdered erythritol sugar as desired before serving.
