Ingredients
- 2 Eggs
- 1 pinch salt
- 200 g spelt whole grain flour
- 2 tbsp Raw cane sugar
- 200 ml light grape juice
- 5 apples (e.g., Boskop)
- 2 tbsp lemon juice
- 1 tbsp powdered sugar from raw cane sugar
- 1 tsp cinnamon

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Whisk together the flour, raw cane sugar, yolks, and grape juice, then fold in the meringue gradually. Peel the apples, core them, slice into 0.7 cm thick rounds, drizzle with lemon juice, and roll each slice through the batter.

Heat oil in a pan and fry the apple fritters until golden brown on both sides. Remove and drain on paper towels. Mix powdered sugar with cinnamon and dust over the fritters before serving.
