Apple Filling Pancakes

Ingredients
- 80 g flour
- 1 pinch salt
- 1 tsp vanilla sugar
- 2 Eggs
- 1 egg yolk
- 100 ml milk
- 100 ml sparkling mineral water
- 2 tbsp liquid butter
- 200 g fresh apples
- 2 tbsp raisins
- 100 g dried apples
- 40 ml Calvados
- 20 g butter
- 30 g sugar
- 5 tbsp cider

Add flour, salt and vanilla sugar to a bowl and whisk in the eggs and egg yolk until a smooth batter forms.

Add milk and sparkling mineral water and beat vigorously again. Stir in liquid butter and let the batter rest for 1 hour.

Soak dried apples and raisins in water, add Calvados, and soak for 1 hour. Remove and cut apple rings into small pieces. Peel, quarter, core fresh apples and slice thinly.

Caramelize butter and sugar in a pan and sauté the apple pieces with raisins. Deglaze with cider and steam the apples for a few minutes.

Heat a little butter in a cast‑iron skillet. Pour a ladleful of batter into the skillet and spread it evenly by turning and swaying. Bake until golden brown, flip with a spatula, and continue baking until the batter is finished.

Spread apple filling on the pancakes, fold them together, and lightly dust with powdered sugar before serving.
