Apple-Cucumber Smoothie

Ingredients
- 1 sour apple (e.g., Granny Smith)
- 1 untreated lemon (juice)
- 1 Banana
- 1 cucumber salad
- 10 ice cubes
- mineral water (to top up)
- Salt
- 1 small Shallot
- 1 tsp chives
- 1 matjes fillet

Peel the apple, quarter it, remove the core, dice the flesh and mix with lemon juice. Set aside about 2 tbsp.

Peel and cube the banana. Peel the cucumber, halve lengthwise, scoop out the seeds and dice about 2 cm of cucumber; add to the apple cubes. Add the rest with the banana, remaining apple pieces, and ice cubes to the blender. Blend finely, adding more mineral water if desired for consistency. Season with a pinch of salt.

Dice the shallot finely. Mix it with the apple-cucumber mixture and add chives. Cut the matjes into bite‑sized pieces and place each on a spoon. Spoon a little apple-cucumber mix over the fish and serve on top of the smoothie.
