Apple Coconut Cake

Ingredients

  • 150 g soft butter
  • 50 g liquid honey
  • 4 eggs
  • 1 large apple
  • 1 tbsp Lemon Juice
  • 80 g coconut flakes
  • 2 tsp Baking powder
  • 160 g spelt flour type 1050
  • 2 tbsp powdered sugar from raw cane sugar

Instructions

    Beat the butter with the honey until creamy. Stir in the eggs. Wash, peel, quarter, core the apple, grate it and mix with lemon juice. Combine the apple and coconut flakes with baking powder and flour, then fold into the egg mixture.

    Pour the batter into a pan lined with parchment paper and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 50–60 minutes. Remove, let cool briefly in the pan, then turn out onto a wire rack. Dust with powdered sugar before serving.
