Fruit Pavlova
Aromatic fruits meet sweet meringue: Try the Fruit Pavlova from Spoonsparrow!
Ingredients
- 2 egg whites
- 1 tsp lemon juice
- 120 g powdered sugar
- 1 passion fruit
- 1 Mango
- 1 tbsp honey
- 1 orange
- 150 g pineapple flesh
- 250 ml Whipping Cream

Preheat the oven to 100°C fan‑forced.

Whisk the egg whites with lemon juice until stiff peaks form, then gradually fold in the powdered sugar. Pipe 12 meringue dots (5–6 cm diameter) onto a parchment‑lined tray and bake for about 40 minutes until crisp yet pale. Remove and cool.

Halve the passion fruit, scoop out pulp and seeds, and blend with honey. Peel the mango, remove the flesh from the pit, puree finely, and mix into the passionfruit mixture. Slice the orange into segments and dice the pineapple; combine all fruits into the sauce. Whip the cream to stiff peaks and spread over eight meringue cookies. Stack them as towers, topping each with a final meringue layer. Pour the fruit sauce over the top and serve immediately.
