- 1 lemon
- 140 g small carrots (2 small carrots)
- 100 g Blueberries (fresh or frozen)
- 160 ml apple juice
- 150 ml coconut milk

Wash the apples, pat them dry and cut off the tops; scoop out the insides with a melon baller, remove the core cavities, and cube the flesh. Halve the lemon and squeeze its juice. Brush the apple tops and the inner parts of the apples with lemon juice and drizzle the apple cubes with lemon juice.

Peel the carrots and grate them coarsely. Wash the blueberries and combine them with the apple cubes, carrot shreds, apple juice, and coconut milk in a blender; blend until smooth.

If desired, thin the smoothie with a little water and fill the hollowed apples. For serving, pierce each apple top with a colorful paper straw and place the tops back on the apples.
