Ingredients

  • butter (for the pan)
  • Semmelbrösel (breadcrumbs for the pan)
  • 250 g soft butter
  • 150 g coconut sugar
  • 6 Eggs
  • 500 g wheat flour type 1050
  • 1 packet baking powder
  • 0.125 l milk (3.5% fat)
  • 1 Lime
  • 100 g raisins
  • 100 g dried apricots (coarsely chopped)
  • 50 g chopped almond kernels
  • Powdered birch sugar for dusting

Instructions

  1. 1.

If necessary, grease the pan and line it with breadcrumbs. Cream butter with coconut sugar. Gradually fold in eggs until the sugar dissolves. Mix flour and baking powder; sift a portion over the dough, stir in, add 4 tablespoons of milk, sift more flour on top, and repeat as needed.

  2. 2.

Process everything into a smooth batter. Fold in lime juice, raisins, apricots, and almonds. Pour the batter into the pan, level it, and bake in a preheated oven at 175 °C (150 °C fan; gas: level 2) for about 50 minutes. Let cool, remove from the pan, and dust with powdered birch sugar before serving.
