Ingredients

  • 125 g butter
  • 125 g sugar
  • 1 tsp salt
  • 0.5 untreated lemon (zest)
  • 2 Eggs
  • 250 g flour
  • 0.5 packet Baking powder
  • 80 g coconut flakes
  • 100 ml milk
  • 250 ml coconut milk
  • 0.5 packet vanilla pudding mix
  • 20 g sugar
  • 30 ml coconut liqueur (e.g., Batida de Coco or Malibu)
  • 200 g butter
  • 70 g powdered sugar
  • 60 ml coconut liqueur
  • 20 ml clear sugar
  • 50 g apricot jam (pureed)
  • 100 g coconut flakes
  • 100 g powdered sugar
  • 0.5 egg white
  • 1 tsp lemon juice
  • red food coloring
  • candy color (or cocoa powder as substitute)
  • colorful Smarties
  • green sugar pearls
  • butter (for the pan)
  • bread crumbs (for the pan)

Instructions

    For the batter, beat butter with sugar, salt and lemon zest until fluffy; gradually fold in eggs. Sift flour, combine with baking powder and coconut flakes, then alternately stir into the mixture with milk. Pour into a butter‑greased pan lined with breadcrumbs and smooth the top. Bake at 180°C for about 40 minutes or until a toothpick comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack and chill overnight. Slice horizontally once.

    For the filling, whisk coconut milk into a cup with pudding mix. Bring remaining milk and sugar to a boil; stir in the pre‑mixed pudding, letting it thicken while stirring occasionally. Remove from heat, add liqueur, dust lightly with powdered sugar, let cool, then strain through a sieve. Beat butter with powdered sugar until fluffy, then fold in portions of coconut pudding.

    Place the lower half of the snowman on a cake board; evenly brush with the liqueur‑sugar mixture and spread frosting over it. Place the upper half on top and press gently. Refrigerate for 2–3 hours. Warm apricot jam slightly in a small pot, spread around the snowman, then dust generously with coconut flakes.

    For the glaze, combine powdered sugar, egg white and lemon juice in a bowl; whisk until smooth and silky. Divide into two portions: color one half red, the other brown. Transfer each to parchment paper spray bags. Use brown glaze to draw hat, mouth and hands on the snowman, and red glaze for the scarf. Add small drops of brown glaze for buttons, nose and eyes, then attach Smarties or green sugar pearls. Allow to set.
