Blueberry Cake

The blueberry cake from Spoonsparrow tastes good for the whole family.

Ingredients

  • 200 g Flour
  • 1 tsp Baking powder
  • 200 g sugar
  • 200 g softened butter
  • 200 g eggs (3 eggs)
  • 50 g coconut flakes
  • 100 g blueberries (cleaned)

Instructions

    Mix flour and baking powder in a bowl; add butter, sugar, and eggs and beat with an electric hand mixer for about 4 minutes.

    Fold in coconut flakes and blueberries, pour batter into greased pan, smooth the top, and bake in a preheated oven at 180°C (middle rack) for about 35–40 minutes. Remove, let stand in the pan for another 15 minutes, then turn out onto a wire rack to cool.
