Orange Cake

Ingredients
- 80 g flour
- 2 tbsp sugar
- 1 tbsp coconut flakes
- a pinch of salt
- 50 g margarine
- butter (for greasing the baking tray)
- flour (for dusting the work surface)
- 80 g softened butter
- 70 g sugar
- 1 large egg
- 2 tsp orange zest
- 70 g flour
- 1 tsp Baking powder
- 1 tbsp orange juice
- 1 tsp orange juice
- 40 g orange jam
- 3 tbsp orange juice
- 1 tsp lemon juice
- 2 tsp orange liqueur
- 10 g powdered sugar

Mix flour, sugar, coconut flakes and salt for the coconut dough, then add margarine in pieces. Knead with a hand mixer’s dough hooks into a smooth shortcrust dough. Shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Preheat the oven to 200°C. Roll out the dough on a floured work surface and grease or line a baking tray with parchment paper. Place the dough on the tray, prickle it several times with a fork and bake in the preheated oven (fan 180°C, gas level 3) for 10 minutes.

For the batter, beat softened butter and sugar until fluffy, then add egg and orange zest. Mix flour with baking powder and fold in the orange juice.

Stir orange jam with orange juice, spread over the warm coconut base and pour the batter on top. Bake for another 15–20 minutes.

Brush the warm cake with a mixture of orange juice, lemon juice, orange liqueur and powdered sugar, then let it cool.

Finally whisk powdered sugar with orange juice and glaze the cake with this mixture.
