Grandma's Walnut Apple Cake

Ingredients
- 150 g Spelt flour Type 1050
- 30 g ground walnuts
- 1 pinch salt
- 5 tbsp Honey
- 3 eggs (medium size)
- 75 g cold butter
- 1 kg tart apples
- 0.5 tsp vanilla powder
- 50 g Raisins
- 50 g walnuts
- 0.5 tsp cinnamon
- 125 ml milk (3.5% fat)

Mix flour with ground walnuts and salt. Press a depression in the center. Add 2 tbsp honey, 1 egg and cold butter pieces into it. Break everything together with a large knife or spatula so that the wet and dry parts combine. Knead the dough smooth. Wrap and chill for about 30 minutes.

Peel, quarter and core the apples. Cut the apples into leaf-like slices and mix with 2 tbsp honey, vanilla powder, raisins, walnuts and cinnamon.

Line the bottom of a springform pan with parchment paper. Briefly knead the dough again and roll it out to about 4 mm thickness on a lightly floured surface. Cut a circle the size of the springform (24 cm diameter) and place it in the pan.

Knead the remaining dough together and shape into small rolls. Place them around the edge and press firmly. Prick the dough several times with a fork.

Spread the apples over the dough. Whisk the remaining eggs with milk and the rest of the honey, then pour over the apples. Bake the apple tart in a preheated oven at 180 °C (convection: 160 °C; gas: level 2–3) for 50–60 minutes.
