Ingredients

  • 100 g butter
  • 4 eggs
  • 2 tbsp cane sugar
  • 60 g applesauce
  • 1 tsp Baking powder
  • 200 g spelt whole‑grain flour
  • a pinch of salt
  • 500 g apples
  • 1 tbsp powdered sugar made from raw cane sugar
  • 1 tsp vanilla powder

Instructions

    Melt the butter over low heat and let it cool. Whisk eggs, cane sugar, applesauce, and salt until frothy. Fold in the cooled butter, baking powder, and sifted flour. Peel, quarter, core, and thinly slice the apples. Mix 400 g of the apple slices into the batter. If needed, grease a springform pan and pour in the batter.

    Arrange the remaining apple slices in a rosette pattern on top of the batter. Bake in a preheated oven at 200 °C (convection: 180 °C; gas: level 3) for about 40 minutes. After 20 minutes cover the cake. Remove from the oven, carefully lift it out of the pan and let it cool. Mix powdered sugar and vanilla powder and dust the cake with this mixture.
