The apricot chutney from Spoonsparrow gives savory dishes a tasty fruity note.

Ingredients

  • 500 g apricots
  • 100 g Dried Apricots
  • 2 onions
  • 1 chili pepper
  • 50 g whole cane sugar
  • 6 tbsp vinegar
  • 1 tsp curry powder
  • 1 tsp lemon zest
  • Salt
  • Pepper

Instructions

    Soak apricots in boiling water, shock, peel, halve, remove pits and dice with dried apricots. Peel onions and finely dice them. Slice chili pepper lengthwise, deseed, wash and finely chop.

    Combine all ingredients with sugar, vinegar, curry and lemon zest in a pot and simmer over medium heat for 15–20 minutes while stirring. Add water if needed and season with salt and pepper.
