Ingredients
- 4 medium tender artichokes
- 1 lemon
- 1 bunch lemon balm
- 1 bunch parsley
- 1 Shallot
- 4 Garlic cloves
- coarse Sea salt
- pepper (ground)
- 400 ml dry white wine
- 4 tbsp olive oil

Preheat the oven to 180°C fan.

Wash the artichokes, remove outer leaves and trim stems. Cut leaf tips and remove center choke. Slightly separate leaves and rub each with half a lemon.

Wash the lemon balm and parsley, pick off stems and finely chop leaves. Peel and finely chop shallot and garlic cloves. Mix herbs with shallot, garlic, salt and pepper.

Fill four oven‑proof ramekins with 100 ml white wine and olive oil each. Stuff artichokes with herb mixture and place stem side up in the ramekins. Cover with foil and bake in preheated oven for about an hour until tender.
