Ingredients
- 6 chicken breast fillets
- Salt
- Pepper
- 8 tbsp olive oil
- 2 bunches spring onions
- 2 bunches flat-leaf parsley
- 2 red bell peppers
- 50 g Pine nuts
- juice of 2 lemons
Instructions

Season the chicken breast fillets with salt and pepper. Heat 4 tbsp olive oil in a large non-stick pan. Cook the chicken fillets for 12-15 minutes, turning occasionally.

Clean, wash, and finely chop the spring onions. Rinse the parsley, shake dry, and roughly tear the leaves. Slice the bell peppers, remove seeds, rinse, then finely dice them.
