Almond Orange Financiers

Ingredients

  • 150 g butter
  • 250 g powdered sugar
  • 135 g ground almonds
  • 60 g flour
  • 1 orange (unprocessed)
  • 5 egg whites
  • butter (for the molds)
  • candied orange zest

Instructions

    Preheat the oven to 230°C. Grease the financier molds well.

    Melt the butter over medium heat, optionally frothing it slightly until it turns lightly brown (nutty butter). Then let the butter cool to room temperature.

    In a large mixing bowl whisk the egg whites into stiff peaks. Add sifted powdered sugar, almonds, sifted flour and grated orange zest. Pour in the butter and gently fold everything together.

    Fill the financier molds about halfway with the batter and top with strips of candied orange zest. Bake at 230°C for about 5 minutes, then reduce to 200°C for another 5 minutes. Turn off the oven and leave the cakes in the oven for an additional 5 minutes.

    Let the financiers cool slightly, but remove them from the molds while still warm.
