Almond Orange Cake

- Flour (for the sheet)
- 4 untreated oranges
- 40 g Butter
- 4 eggs
- 1 pinch salt
- 160 g sugar
- 75 g flour
- 200 g ground, peeled almond kernels

Preheat the oven to 200°C with upper and lower heat.

Grease the baking sheet and dust it with flour. Wash half of the oranges hot, pat dry and slice thinly. Wash the other oranges hot, dry rub them, grate the zest finely and squeeze out the juice. Melt the butter and let it cool.

Separate the eggs. Beat the yolks with salt and sugar until fluffy. Fold in the orange zest, flour, ground almonds and juice. Whisk the egg whites stiff and fold gently into the mixture. Finally fold in the butter. Spread the batter on the sheet, top with orange slices and bake in the preheated oven for about 40 minutes (cover with foil after about 30 minutes if needed; test with a skewer!). Remove the cake and let it cool. Cut into strips for serving or gifting.
