Almond Cookies

Ingredients

  • 50 g almond flakes
  • 1 egg
  • 60 g soft butter
  • 60 g sugar
  • 1 tsp cinnamon
  • 80 g flour
  • 70 g powdered sugar
  • 1 tbsp Lemon Juice
  • 1 tbsp liquid butter

Instructions

    Crush the almond flakes coarsely. Separate the egg, whisk the yolk, lightly beat the white.

    Beat the soft butter until fluffy, then stir in sugar, cinnamon and 1 tbsp of yolk, finally fold in the flour.

    Spread the dough into a greased pan (18 x 18 cm), lay a sheet of parchment over it, spread the dough evenly. Remove the paper. Brush 2 tbsp of egg white on the dough. Sprinkle almond pieces over it, cover again with parchment, press down and gently press the almonds into the dough. Remove the paper. Bake the almond cake in a preheated oven at 160°C (middle rack) for about 35-40 minutes until golden yellow.

    Whisk powdered sugar with lemon juice, butter into a not too thick glaze. Immediately drizzle over the hot cake after baking and spread gently, let cool. Then lift from the pan, cut first into ~2.5 cm wide strips, then cut these diagonally into diamonds or triangles.
