Ingredients

  • 500 g mango flesh
  • 6 fresh egg yolks
  • 150 g powdered sugar
  • 1 lime (zest and juice)
  • 250 g quark cream cheese
  • 400 g whipping cream
  • cocoa powder
  • aluminum foil
  • 6 soufflé molds
  • mint

Instructions

    Fold a suitable strip of aluminum foil to about 10 cm height, place it around each soufflé mold so that the strip overhangs the rim and tuck the ends together.

    Puree the mango flesh.

    Whisk egg yolks with powdered sugar until frothy. Stir in lime zest, lime juice, quark cream cheese, and mango puree. Beat whipping cream stiff and fold into the mixture. Pour the mango mixture about 2 cm above the rim of each mold and freeze for approximately 4 hours.

    Place the frozen mango soufflés in the refrigerator 30 minutes before serving. Carefully remove the aluminum strip. Serve garnished with fine mango strips and mint.
