Ingredients
- 100 g almond kernels (soaked, finely ground)
- 0.5 l milk
- 1 pinch salt
- 70 g sugar (more or less to taste)
- 100 g rice starch
- 3 tbsp pistachios (chopped)
- 3 tbsp almond kernels (chopped, de-skinned)
Instructions

Heat the milk and add the almonds, sugar, and salt; bring to a boil once while stirring, remove from heat and let cool. After 1 hour strain the milk through a fine sieve, squeeze the almonds well so as much liquid as possible is removed.

Return the milk to the pot and slowly reheat. Whisk the starch with 150 ml cold water and add it to the boiling almond milk while stirring; bring to a boil once, pour into pre-warmed glasses, let cool for at least 2 hours, then serve garnished with almonds and pistachios.
