Almond Macarons

Ingredients

  • 1 untreated orange
  • 3 egg whites
  • a pinch of salt
  • 150 g sugar
  • 1 egg yolk
  • 350 g ground almonds

Instructions

    Wash the orange hot, dry grate it and rub off the zest. Squeeze the juice of half an orange. Beat the egg whites with a pinch until stiff, letting the sugar fall in gradually. Fold the egg yolk with the almonds, orange zest and orange juice into the mixture. The dough should not be too soft but springy; use slightly less juice if needed.

    Preheat the oven to 180°C fan-forced. Line a baking tray with parchment paper.

    Fill a piping bag fitted with a star tip with the dough and pipe dollops (2-3 cm diameter) onto the tray. Bake in the oven for 10-15 minutes until golden brown. Remove from the tray and let cool.
