Almond Chocolate Macarons

Ingredients
- 3 egg whites
- 1 pinch salt
- 200 g powdered sugar
- 1 tsp lemon juice
- 150 g almond kernels
- 2 tbsp Cornstarch
- 100 g dark chocolate couverture
- 2 tbsp cocoa powder
- 0.5 tsp cinnamon
- 40 almond kernels

Beat the egg whites until stiff, incorporating salt and powdered sugar, then add lemon juice and continue beating until the mixture glows and forms soft peaks.

Mix ground almonds with cornstarch, grated dark chocolate couverture, and cinnamon, then fold into the meringue.

Fill a piping bag fitted with a large round tip with the batter and pipe about 80 cherry-sized clumps onto a baking sheet lined with parchment paper, leaving some space between them.

Use a small knife to halve the almonds by cutting at the tip and along the natural seam. Place the almond halves on top of the macarons.

Bake in a preheated oven at 150°C for approximately 25 minutes. Remove, detach immediately from the tray, and cool on a wire rack.
