Almond Florentine

Ingredients

  • 125 g almond flakes
  • 50 g diced candied orange peel
  • 50 g diced candied lemon peel
  • 125 g sugar
  • 1 tbsp butter
  • 125 ml whipping cream
  • 2 tbsp flour
  • 150 g dark chocolate couverture

Instructions

    Add almond flakes, candied orange peel, candied lemon peel, sugar, butter and cream to a pot and simmer while stirring for 3 minutes. Remove from heat and stir in the flour.

    Place small mounds on a parchment-lined baking sheet with wide spacing. Bake in a preheated oven at 225°C (gas: level 5-6, fan: 200°C) for about 7 minutes. Press the separated cookies together using a cookie cutter. Let cool, then carefully lift them off the parchment.

    Cut the chocolate into pieces, place in a bowl and melt over a double boiler. Allow to cool slightly but do not let it harden, then coat the underside of the Florentines with the melted chocolate. Let the chocolate set.
