Ingredients
- 50 g lemon zest
- 2 Eggs
- 200 g cane sugar granules
- 1 tsp reconstituted salt
- 1 untreated lemon (zest)
- 1 pinch white pepper (freshly ground)
- 1 pinch cloves (ground)
- 1 pinch cardamom (ground)
- 1 pinch nutmeg (ground)
- 1 pinch allspice (ground)
- 1 tsp cinnamon powder
- 250 g whole wheat flour
- 100 g oat flour
- 4 tbsp milk
- butter (for greasing the baking sheet)

Finely chop the lemon zest. Whisk the eggs with the sugar until frothy. Dissolve the reconstituted salt in a little cold water and mix it into the lemon zest and all spices. Sprinkle the whole wheat flour, oat flour, and lemon zest over the froth and knead in the milk. Preheat the oven to 200 °C fan‑forced. Grease the baking sheet with butter. Roll out the dough to 1 cm thickness, cut circles of 3 cm diameter, and place them on the sheet. Bake on the middle rack for about 15 minutes.
