Peppernuts

Ingredients
- 50 g Brown sugar
- 100 g honey
- 20 g butter
- 1 egg yolk
- 1 tsp gingerbread spice
- a pinch of salt
- 175 g flour
- 0.5 tsp Baking powder
- 1 tbsp rum
- 100 g pine nuts
- 150 g powdered sugar
- 1 tbsp Lemon Juice

Melt the sugar with the honey and butter in a small saucepan while stirring. Remove from heat and let cool. Stir in the egg yolk, gingerbread spice, and salt. Knead in the flour, baking powder, and rum until smooth. Wrap in plastic wrap and chill for about 30 minutes.

Preheat the oven to 180°C fan.

Shape the dough into a rope (about 2 cm diameter) and cut into roughly 25 pieces. Form each into walnut-sized balls and place them with some space on a baking sheet lined with parchment paper. Press about 8 pine nuts onto each ball. Bake in the oven for 15-20 minutes. Carefully remove from the tray and let cool.

Whisk powdered sugar with lemon juice to make a thick glaze. Brush the peppernuts with the glaze and allow to dry.
